01 - Preheat the oven to 350°F (180°C). Lightly grease a medium baking dish, approximately 8 inches square.
02 - In a large bowl, toss apple slices with lemon juice, brown sugar, cinnamon, nutmeg, and salt. Distribute evenly across the prepared baking dish.
03 - Combine ricotta cheese, honey, vanilla extract, and lemon zest in a separate bowl. Spoon the mixture over the apples and gently spread to cover most of the fruit.
04 - Mix granola with melted butter and maple syrup until thoroughly coated. Evenly sprinkle the topping over the ricotta layer.
05 - Bake for 30 to 35 minutes until the granola is golden brown and apples are tender.
06 - Allow to cool at least 10 minutes before serving. Present warm or at room temperature.
